The recipe is very simple and even for gluten-free gourmets, I've included the perfect formula to make this succulent cake possible for everyone. I'm sharing with you the irresistible recipe for a gluten-free pear chocolate cake. This cake combines the delicious juiciness of fresh pears with the tantalising sweetness of chocolate chips to create a true taste sensation.

For this simple oil cake, separate the eggs and beat the egg whites with a pinch of salt and a hand mixer until stiff.

Then beat the egg yolks, sugar, vanilla sugar, water and oil in another bowl until foamy, mix the flour with baking powder or, for the gluten-free alternative, mix all the flours together well and stir into the yolk mixture.

Peel and core the pears and cut into small pieces.

Fold the chopped chocolate and pear pieces into the mixture.

Now just fold the beaten egg whites into the mixture and mix to a creamy batter.

Then bake the dough in a buttered ring cake tin or ring cake tin at 180°C (top/bottom heat) in the preheated oven for approx. 25-30 minutes.

If desired, you can decorate the cake with chocolate icing and dried rose petals. The cake can also simply be sprinkled with icing sugar
